I have a fun, super easy recipe for you today. With the changing seasons, fresh berries are back! There’s nothing tastier than juicy berries– am I right? Especially when you’re enjoying some over brunch with friends.
Over the weekend, I spent some time in Athens, OH. We stopped by a breakfast joint for biscuits and all I could think about was adding some homemade jam to the meal. I originally saw this recipe from Eating Bird Food last week and decided I was going to make it when I got home.
This recipe has 3 ingredients and took me less than 5 minutes to prepare. I am a HUGE fan of making things from scratch because you cut out the additives and the final product always tastes better.
If you look at a store-bought equivalent to this recipe, you’ll see the following ingredients: FRUIT BLEND (BLUEBERRIES, BLACKBERRIES, RED RASPBERRIES), SUGAR, FRUIT PECTIN, CITRIC ACID. Take note of a few things:
- Added Sugar. Fruit is naturally sweet and there is no need to add more.
- Fruit Pectin. This is a gelling agent. Although fruit pectin is considered safe by the FDA, there are healthier alternatives. In my recipe I made, the chia seeds act as the gelling agent. Chia seeds are a great source of omega-3’s that help protect against inflammation in the body.
- Citric Acid. This is a preservative and again, although it is considered safe by the FDA, it’s only purpose is to extend the shelf life of the jam.
By making your own jam, you take out the added sugar and excess ingredients for an overall healthier treat. Here is how to make it:
- 2 cups fruit
- 2 tablespoons chia seeds
- 1 teaspoon vanilla
- Place the fruit and chia seeds into a food processor.
- Pulse until all is blended.
- Place mixture into a jar and refrigerate for 1-2 hours.
