↑ 6:30AM sunrise this morning
Hi everyone! This morning, I’m writing to you from my new kitchen bar, drinking a homemade cup of coffee from my new ikea French press. I also woke up early this morning to get in a 7AM workout from FuelHouse Gym. Life is good!
I still have a few more posts that I want to share from our road trip, but so much has happened since we arrived in Seattle, and I want to get it all down before I forget. My mom left yesterday to head back home, and it left me feeling more sad and alone than I was anticipating.
I haven’t lived in the same city as my family since I left for college at 18…so the past 10 days were the most time my mom and I have spent together in ages. We had a trip of a lifetime, and I’m so happy she was by my side during this transition.
It only makes sense that a lot of my Seattle fun has revolved around food. We’ve tried some great restaurants in a few short days!
↑ I couldn’t pass up this matcha donut from Flying Apron, a gluten free, vegan bakery in Fremont
↑ I made my perfect green smoothie in my new vitamix (thanks, babe!) Just look at that creaminess!
↑ I had my gorgeous friend Erin over for dinner (she hosted me while I was apartment searching!) and we made turkey chili, corn bread, and the best homemade brownies for dinner. Erin brought the salad and wine!
↑ My favorite morning breakfast: eggs over-easy (protein); avocado (healthy fats); whole grain bread (grain); strawberries (fruit.)
↑ Smoked chicken salad from Martino’s
↑ The best homemade coffee ice cream from Bluebird Ice ceam
↑ A quick coffee/croissant break from Coyle’s Bakeshop
↑ View from our walk home last night
It’s become even more apparent in just a few days that I really lucked out with my roommates. They are really friendly, easy to talk to, and just all-around awesome!
I was also reunited with Amanda last night before walking to campus to meet up with some more members of our cohort for happy hour. It was really fun! It’s going to be a great group – I can already tell.
Later this morning, I’m meeting up with Dani from Dani California Cooks because she’s in town for business. Such a fun coincidence!
I’m still in the process of organizing my room, but if you don’t follow me on instagram, here is a quick snapshot of the only clean space in my place right now 😉 I will try to post more photos when my room is all cleaned up and organized!
Before my mom left yesterday, we walked around campus. I have only been to the UW campus a a handful of times, so it was nice to explore it with my mom. I just had to take a photo in front of the giant ‘W’ ↑. Never have I been so proud to be at a university.
- Did/do you have a lot of school spirit?
- First thing you like to get organized in a new house/room?
- Walk, bus, drive, or bike places?
