This recipe is my latest obsession. It was inspired by a smoothie that my roommate ordered from a local juice bar in the area. When I’m craving something sweet or chocolatey, but don’t want to succumb to candy or sugary treats, I make this delicious protein-filled smoothie.
Real mint is absolutely key to this recipe, so make sure to pick some from your garden or grab a bunch from the grocery store.
One of the best parts of this smoothie is that it’s incredibly filling. The cashews, coconut milk, and optional scoop of peanut butter are full of healthy fats and protein. Fats and protein contribute to helping us feel full for longer periods of time and are great components of snacks.
I used a Vitamix to blend this all together so if you’re using a regular blender, I recommend soaking the cashews overnight to soften them before blending.
Enjoy and let me know your thoughts if you make it!
